Palace favourite: The Queen's royal pastry chef shares secret Christmas recipe

<p>Royal fans have been given a special glimpse into how the Queen spends Christmas Day with her family.</p> <p>The Queen’s royal pastry chef has released a secret recipe from the kitchen of Sandringham House – and it is a Christmas favourite! </p> <p>Sharing the “Christmas Ginger Bread Biscuits” recipe on the Royal Family’s official <a href="https://www.royal.uk/inside-kitchens-buckingham-palace-christmas-ginger-bread-biscuits"><strong><u>website</u></strong></a>, one of the royal pastry chefs revealed a special tip to those who attempt to make the festive treat.</p> <p>"It's always best to let the dough rest, so it's great if you can make the dough the night before," revealed one of the royal pastry chefs.  </p> <p>"You can also roll out the dough, cut the shapes and put them in the freezer for an hour. Wrap in film and allow to rest for minimum 2 hours (best left overnight).</li> <li>Preheat oven to 180C.</li> <li>Roll out to approximately 3mm (but depends on the size of the cookie you wish to make), cut shapes out and lay on to greaseproof paper or silicon mat. Sprinkle with a little granulated sugar before baking at 180C until set.</li> <li>Allow to cool fully on a cooling rack before icing with your choice of design.</li> </ol> <p>Will you be making gingerbread biscuits this Christmas? Pineapple gingerbread crumble

<p>Cosy up with a bowl of this beautiful roasted pineapple crumble – the perfect way to bring a touch of endless Aussie summer to the dinner table during the colder months.</p> <p><strong><span style="text-decoration: underline;">Serves:</span></strong> 4</p> <p><strong><span style="text-decoration: underline;">Ingredients:</span></strong></p> <ul> <li>3/4 cup rolled oats</li> <li>1/4 cup wholemeal flour</li> <li>2 tablespoons slivered almonds, chopped finely</li> <li>75g cold butter or cold coconut oil</li> <li>3 tablespoons honey</li> <li>1 small pineapple, peeled, cored and cut into chunks</li> <li>1 teaspoon ginger</li> <li>1/2 teaspoon cinnamon</li> <li>1/4 teaspoon ground cloves</li> <li>1/4 cup water</li> <li>2 tablespoons shredded coconut, to serve</li> </ul> <p><strong><span style="text-decoration: underline;">Method:</span></strong></p> <ol> <li>Preheat oven to 180°C (160°C fan-forced).</li> <li>To make the crumble, mix together the oats, flour, almonds, butter or coconut oil and honey until sticky breadcrumbs form.</li> <li>Place in the fridge for 5-10 minutes.</li> <li>Meanwhile prepare the pineapple.</li> <li>Mix together the pineapple, ginger, cinnamon, cloves and water in a large baking dish.</li> <li>Place coconut flakes in a small frying pan set over medium heat and toast for one minute.</li> <li>Sprinkle the pineapple with crumble and bake for 25 minutes or until the crumble is golden and pineapple caramelised slightly.</li> <li>Remove from the oven and serve topped with toasted coconut flakes.</li> </ol> <p><strong><span style="text-decoration: underline;">Tip</span><span style="text-decoration: underline;">:</span></strong> Serve with a scoop of vanilla ice cream or custard, but the crumble is just as delicious all on its own.</p> <p><em>Recipe courtesy of <a href="http://www.aussiepineapples.com.au/" target="_blank"><strong><span style="text-decoration: underline;">Australian Pineapples</span></strong></a>.</em></p> <p><em><strong>Have you ordered your copy of the Over60 cookbook, </strong></em><strong>The Way Mum Made It</strong><em><strong>, yet? Artist creates real-life gingerbread house for Christmas

<p>An artist in Los Angeles has put pretty much everyone’s Christmas decorations to shame by transforming her parent’s house into a gingerbread-style house just in time for Christmas.</p> <p>Christine McConnell, who is also an accomplished photographer and baker, went all out this year incorporating intricate details like gingerbread men, icing on the roof and lollipop lawn adornments in her final design. The fact that her parent’s house already looks like a fairy tale cottage also helps!</p> <p><img width="499" height="280" src="https://oversixtydev.blob.core.windows.net/media/12437/christmas-house-in-body_499x280.jpg" alt="Christmas House In Body" style="display: block; margin-left: auto; margin-right: auto;"/></p> <p>And while the gingerbread-style house may look amazing (and almost appetising), it’s definitely not edible. Ms McConnell constructed the gingerbread men from foam core insulation board, icing roof from nylon rope netting and hand painted the candy striped decorations.</p> <p>For the final photo shoot also enlisted the help of her niece and nephew to play Hansel and Gretel. Gingerbread men

<p>It’s beginning to look a lot like Christmas. And there isn’t a biscuit out there that represents the holiday season more deliciously than gingerbread men. Make your own with this recipe.</p> <p><strong><span style="text-decoration: underline;">Ingredients:</span></strong></p> <p><strong>Gingerbread Men</strong></p> <ul> <li>150g butter, chopped</li> <li>½ cup firmly packed dark brown sugar</li> <li>½ cup honey</li> <li>1 teaspoon bicarbonate of soda, sifted</li> <li>1 egg, lightly beaten</li> <li>1 tablespoon ground ginger, sifted</li> <li>1 teaspoon mixed spice, sifted</li> <li>½ teaspoon baking powder, sifted</li> <li>3 cups plain flour, sifted</li> </ul> <p><strong>Icing</strong></p> <ul> <li>1 eggwhite</li> <li>1 ¼ cups pure icing sugar, sifted</li> <li>½  teaspoon lemon juice</li> </ul> <p><strong><span style="text-decoration: underline;">Method:</span></strong></p> <ol> <li>Place butter, honey and sugar in a saucepan over medium heat. Cook for around about three minutes while stirring until sugar is deserved. Bring to the boil then remove from heat.</li> <li>Stir in bicarbonate of soda, then transfer to a large, heatproof bowl to cool.</li> <li>Stir in egg, ginger, mixed spice, baking powder and flour until combined.</li> <li>Divide dough in half, shape into discs and cover with plastic wrap.</li> <li>Refrigerate your dough for one hour or until firm.</li> <li>Preheat oven to 180°C. Grease three baking trays and line with baking paper.</li> <li>Roll on dough disc between two sheets of baking paper until roughly 3mm thick.</li> <li>Cut shapes from dough with gingerbread man cutter and reroll scraps and repeat.</li> <li>Bake, one tray at a time, for around about eight minutes until they’re firm to touch. Stand on trays for about five minutes, then transfer to wire rack to cool completely.</li> <li>Prepare your icing. Beat eggwhite in a bowl with a fork until foaming, and gradually beat in icing sugar until combined.
