The ultimate chicken pie recipe

<p>Looking for something impressive (but quite easy) to make this weekend? Look no further than this scrumptious pie. Served with a salad, it’s a delicious meal for summer that will impress the entire family. </p> <p><strong>Serves:</strong> Four to six</p> <p><strong>Preparation time:</strong> 15 minutes</p> <p><strong>Cooking time:</strong> 40 minutes</p> <p><span style="text-decoration: underline;"><strong>Ingredients:</strong></span></p> <ul> <li>4 tablespoons butter</li> <li>1/4 cup onion, chopped</li> <li>1/4 cup celery, chopped</li> <li>1/4 cup carrot, chopped</li> <li>1/4 teaspoon salt</li> <li>2 tablespoons flour</li> <li>2 cups milk</li> <li>1/2 cup thick cream</li> <li>1 cube chicken stock, dissolved in hot water</li> <li>2 cups chicken, cooked and chopped</li> <li>1/2 cup frozen peas</li> <li>1/2 teaspoon fresh thyme plus more for garnish if desired</li> <li>Frozen shortcrust pastry</li> <li>Fozen puff pastry</li> <li>1 egg</li> </ul> <p><span style="text-decoration: underline;"><strong>Method:</strong></span></p> <ol> <li>Allow puff pastry to thaw at room temperature and then gently unfold.</li> <li>In a large pot, melt butter over medium high heat.</li> <li>Add onion, celery, carrot, and salt and sauté until onions are translucent and vegetables start to get tender.</li> <li>Sprinkle flour over vegetables and cook for one to two minutes.</li> <li>Gradually whisk in milk, cream and chicken stock, and bring to a slow boil.</li> <li>Simmer gently over medium heat until sauce begins to thicken (should take about five minutes).</li> <li>Turn heat to low, and add chicken, peas and thyme.</li> <li>Preheat oven to 220.</li> <li>Line the base and side of a pie dish with the shortcrust pastry. Trim the edge. Line with baking paper and fill with rice or dried beans. Bake for 10 minutes. Remove the paper, rice or dried beans and bake for a further 8 minutes, or until pastry is lightly golden. Remove from oven and let cool a little.</li> <li>Pour chicken mixture into a baking dish.</li> <li>Place the puff pastry over the top to enclose the filling. Use a small, sharp knife to trim the edge.</li> <li>Using a pastry brush, brush egg onto the top of the puff pastry.</li> <li>Bake for 30 to 35 minutes. “Fly free beautiful angel”: Lisa Curry says final goodbye to Jaimi

No turning back. One step at a time. Shepherd’s pie with sweet potato topping

<p>Not only is this dish the perfect comfort food for a chilly evening, but it’s also a meal with an interesting history.</p> <p>Made to use up any leftover meat, Shepard’s pie dates back to the 1790s. When it is made with beef it's called cottage pie and if it is made with lamb, then it's shepherd's pie.</p> <p>The sweet potato really spices this recipe up a bit to give it some kiwi flavour.</p> <p><strong><span style="text-decoration: underline;">Ingredients:</span></strong></p> <ul> <li>2 tbsp. butter, olive or coconut oil</li> <li>1 brown onion, finely chopped</li> <li>2 medium carrots, medium diced</li> <li>2 celery sticks, medium diced</li> <li>450g lamb mince</li> <li>1 ½ (375ml) cups beef stock</li> <li>1 tbsps. Worcestershire sauce</li> <li>40g tomato paste</li> <li>2 large sweet potatoes, peel and cut to quarters</li> <li>2 more tbsps. of butter</li> <li>Dash of cream or full fat milk</li> <li>½ cup mozzarella cheese grated</li> <li>¼ cup parmesan cheese, grated</li> <li>Freshly ground salt and pepper</li> </ul> <p><strong><span style="text-decoration: underline;">Method:</span></strong></p> <ol> <li>Preheat oven to 180°C for a fan forced oven.</li> <li>Heat butter in a large pan and on a medium heat add onions, carrot and celery.</li> <li>Cook stirring for 5 minutes or until vegetables are softened.</li> <li>Add lamb and cook until browned, for about 5-8 minutes, squashing any lumps with a fork.</li> <li>Add beef stock, Worcestershire sauce and tomato paste.</li> <li>Season with salt and pepper.</li> <li>Reduce heat to low, stirring occasionally and cook for 30 - 40 minutes or until sauce thickens.</li> <li>When meat sauce has thickened, spoon into an oven proof dish and spread with mashed sweet potatoes.</li> <li>Sprinkle with the two cheeses.</li> <li>Bake 20 minutes or until the top is golden and juices are bubbling through.</li> <li>Serve with some simple steamed broccoli.</li> </ol> <p><em>Image: Getty</em></p>

“Goodbye Little Darlin’”: Johnny Cash fan snaps up singer’s former home

<p dir="ltr">After just two months on the market, the sprawling ranch Johnny Cash built in the hills of California has been snagged by a generous local fan.</p> <p dir="ltr"><a href="https://www.oversixty.com.au/property/real-estate/walk-the-rooms-inside-the-house-that-johnny-cash-built" target="_blank" rel="noopener">With an asking price of $US 1.795 million</a> ($NZ 3.16 million), the home’s new owner paid an extra $55,000 ($NZ 96,000) for the keys to the six-acre ranch.</p> <p dir="ltr">The Ring of Fire singer reportedly built the ‘60s style compound in Ventura, California, in 1961 as an escape from Los Angeles and a place where he and his wife, Vivian, could raise their two daughters.</p> <p dir="ltr">Unlike other celebrity neighbours, it seems that Cash was on friendly terms with the locals, with residents from the nearby village of Casitas Springs recalling Cash setting up speakers on the hillside outside his home and playing concerts for the people living below, per <em><a href="https://www.realtor.com/news/celebrity-real-estate/johnny-cash-fan-buys-the-singers-former-ranch-in-ventura/" target="_blank" rel="noopener">realtor.com</a></em>.</p> <p dir="ltr">In 1966, the couple divorced, with Cash marrying June Carter two years later and relocating to Nashville.</p> <p dir="ltr">Vivian later offloaded the five-bedroom home in the 1970s.</p> <p dir="ltr">Even after all these years, the property still features details from when Cash called it home, including a wall-mounted timetable and painted ceilings “imbued with glitter”, according to <a href="https://www.realtor.com/realestateandhomes-detail/8736-Nye-Rd_Ventura_CA_93001_M13740-10847" target="_blank" rel="noopener">the listing</a>.</p> <p dir="ltr">His wood-panelled studio has also been preserved. Built with high windows, the studio was designed so the six-foot singer could look out without others being able to see in.</p> <p dir="ltr">The panelled walls, wagon wheel chandeliers and curved brick fireplace in the living room also add to the rustic feel of the home’s interior.</p> <p dir="ltr">Outside, you’ll find cypresses and oak trees, a large pool and spa, and a hillside barbecue area where Cash taught his daughters to shoot - with spent shells still being found there sometimes.</p> <p dir="ltr">With the property being zoned for livestock and plenty of fields ready for planting, it’ll be up to the new owner to decide on the fate of the iconic home.</p> <p><span id="docs-internal-guid-8af7ee9c-7fff-2727-11fc-3aff09f13210"></span></p> <p dir="ltr"><em>Images: Realtor.com / Getty Images</em></p>

<p>For a hearty meal that is sure to satisfy, this family favourite Shepherd’s pie will be a hit with young and old alike.</p> <p><strong><span style="text-decoration: underline;">Serves</span>:</strong> 4</p> <p><strong><span style="text-decoration: underline;">Ingredients</span>:</strong></p> <ul> <li>1 tablespoon olive oil</li> <li>1 brown onion, diced</li> <li>2 carrot, finely diced</li> <li>500g beef mince</li> <li>2 tablespoon tomato paste</li> <li>400g can peeled tomatoes</li> <li>1 cup beef stock</li> <li>1 teaspoon Worcestershire sauce</li> <li>1 teaspoon mixed herbs</li> <li>750g potatoes, washed, peeled and chopped</li> <li>¼ cup milk</li> <li>50g butter</li> <li>Salt and pepper, to season</li> </ul> <p><strong><span style="text-decoration: underline;">Method</span>:</strong></p> <ol> <li>Preheat the oven to 180°C. Heat olive oil in a frying pan and cook onion and carrots for 5 minute or until softened. Add mince and cook for three minutes or until browned.</li> <li>Season with salt and pepper. Stir through tomato paste, tomatoes, stock, <br />Worcestershire sauce, and herbs. Cover and simmer on low for 15 minutes. Remove lid and cook for a further 10 minutes.</li> <li>Meanwhile, add potatoes in saucepan of salted water. Boil and reduce to simmer. Cook until tender. Drain well and mash with butter and milk until smooth. Season with salt and pepper to taste.</li> <li>Spread beef mixture evenly in an ovenproof baking dish. Spoon potatoes into large pastry bag fitted with star tip. Pipe rosettes over beef mixture. Goodbye Internet Explorer. You won’t be missed (but your legacy will be remembered)

<p>After 27 years, Microsoft has finally bid farewell to the web browser Internet Explorer, and will redirect Explorer users to the latest version of its Edge browser.</p> <p>As of June 15, Microsoft ended support for Explorer on several versions of Windows 10 – meaning no more productivity, reliability or security updates. Explorer will remain a working browser, but won’t be protected as new threats emerge.</p> <p>Twenty-seven years is a long time in computing. Many would say this move was long overdue. Explorer has been long outperformed by its competitors, and years of poor user experiences have made it the butt of many internet jokes.</p> <blockquote class="twitter-tweet"> <p dir="ltr" lang="en">Someone built a real tombstone of Internet Explorer in Korea. After all, it was only in 1993 that Tim Berners-Lee, the father of the web, <a href="https://thenextweb.com/news/20-years-ago-today-the-world-wide-web-opened-to-the-public" target="_blank" rel="noopener">released</a> the first public web browser (aptly called WorldWideWeb).</p> <p>Providing Explorer as its default browser meant a large proportion of Windows’s global user base would not experience an alternative. But this came at a cost, and Microsoft eventually faced multiple <a href="https://corporatefinanceinstitute.com/resources/knowledge/strategy/microsoft-antitrust-case/" target="_blank" rel="noopener">antitrust investigations</a> exploring its monopoly on the browser market.</p> <p>Still, even though <a href="https://www.mozilla.org/en-US/firefox/browsers/browser-history/" target="_blank" rel="noopener">a number</a> of other browsers were around (including Netscape Navigator, which pre-dated Explorer), Explorer remained the default choice for millions of people up until around 2002, when Firefox was launched.</p> <p><strong>How it ended</strong></p> <p>Microsoft has released 11 versions of Explorer (with many minor revisions along the way). It added different functionality and components with each release. Microsoft itself has <a href="https://docs.microsoft.com/en-us/deployedge/microsoft-edge-security-iemode-safer-than-ie" target="_blank" rel="noopener">acknowledged</a> this:</p> <blockquote> <p>… [Explorer] is still based on technology that’s 25 years old. It’s a legacy browser that’s architecturally outdated and unable to meet the security challenges of the modern web.</p> </blockquote> <p>These concerns have resulted in the United States <a href="https://www.dhs.gov/" target="_blank" rel="noopener">Department for Homeland Security</a> repeatedly advising internet users against <a href="https://windowsreport.com/internet-explorer-security-issues/" target="_blank" rel="noopener">using Explorer</a>.</p> <p>Explorer’s failure to win over modern audiences is further evident through Microsoft’s ongoing attempts to push users towards Edge. Edge was first introduced in 2015, and since then Explorer has only been used as a compatibility solution.</p> <p><strong>What Explorer was up against</strong></p> <p>In terms of <a href="https://gs.statcounter.com/browser-market-share#monthly-202206-202206-bar" target="_blank" rel="noopener">market share</a>, more than 64% of browser users currently use Chrome. Explorer has dropped to less than 1%, and even Edge only accounts for about 4% of users. What has given Chrome such a leg-up in the browser market?</p> <hr /> <p><iframe class="flourish-embed-iframe" style="width: 786.354px; height: 600px;" title="Interactive or visual content" src="https://flo.uri.sh/visualisation/10361649/embed" width="100%" height="400" frameborder="0" scrolling="no" sandbox="allow-same-origin allow-forms allow-scripts allow-downloads allow-popups allow-popups-to-escape-sandbox allow-top-navigation-by-user-activation"></iframe></p> <div style="width: 100%!; margin-top: 4px!important; text-align: right!important;"><a class="flourish-credit" href="https://public.flourish.studio/visualisation/10361649/?utm_source=embed&amp;utm_campaign=visualisation/10361649" target="_top"><img src="https://public.flourish.studio/resources/made_with_flourish.svg" alt="Made with Flourish" /></a></div> <hr /> <p>Chrome was first introduced by Google in 2008, on the open source <a href="https://www.chromium.org/chromium-projects/" target="_blank" rel="noopener">Chromium project</a>, and has since been actively developed and supported.</p> <p>Being open source means the software is publicly available, and anyone can inspect the source code that runs behind it. Individuals can even contribute to the source code, thereby enhancing the software’s productivity, reliability and security. This was never an option with Explorer.</p> <p>Moreover, Chrome is multi-platform: it can be used in other operating systems such as Linux, MacOS and on mobile devices, and was supporting a range of systems long before Edge was even released.</p> <p>Meanwhile, Explorer has <a href="https://www.zdnet.com/article/zune-hd-no-youtube-in-the-browser-for-you/" target="_blank" rel="noopener">mainly</a> been <a href="https://docs.microsoft.com/en-us/deployedge/microsoft-edge-supported-operating-systems" target="_blank" rel="noopener">restricted</a> to Windows, XBox and a few versions of MacOS.</p> <p><strong>Under the hood</strong></p> <p>Microsoft’s Edge browser is using the same <a href="https://www.chromium.org/chromium-projects/" target="_blank" rel="noopener">Chromium</a> open-source code that Chrome has used since its inception. This is encouraging, but it remains to be seen how Edge will compete against Chrome and other browsers to win users’ confidence.</p> <p>We won’t be surprised if Microsoft fails to nudge customers towards using Edge as their favourite browser. Design and convenience are important factors for users when selecting a browser. So ultimately, the browser that can most effectively balance security and ease of use will win users.</p> <p>And it’s hard to say whether Chrome’s current popularity will be sustained over time. Google will no doubt want it to continue, since web browsers are significant <a href="https://fourweekmba.com/how-does-mozilla-make-money/" target="_blank" rel="noopener">revenue sources</a>.</p> <p>But Google as a corporation is becoming increasingly unpopular due to massive <a href="https://theconversation.com/google-is-leading-a-vast-covert-human-experiment-you-may-be-one-of-the-guinea-pigs-154178" target="_blank" rel="noopener">data gathering</a> and <a href="https://theconversation.com/is-google-getting-worse-increased-advertising-and-algorithm-changes-may-make-it-harder-to-find-what-youre-looking-for-166966" target="_blank" rel="noopener">intrusive advertising</a> practices. Chrome is a key component of Google’s data-gathering machine, so it’s possible users may slowly turn away.</p> <p>As for what to do about Explorer (if you’re one of the few people that still has it sitting meekly on your desktop) – simply <a href="https://docs.microsoft.com/en-us/troubleshoot/developer/browsers/installation/disable-internet-explorer-windows" target="_blank" rel="noopener">uninstall</a> it to avoid security risks.</p> <p>Even if you’re not using Explorer, just having it installed <a href="https://mashable.com/article/internet-explorer-hacker-windows-pc-exploit" target="_blank" rel="noopener">could present</a> a threat to your device. Slow-cooked meat pie hack dubbed a "game-changer"

Parents share heartbreak after kissing their daughter goodbye

<p><span style="font-weight: 400;">A mum has opened up about having to make the heartbreaking decision to turn her daughter’s life support off following a crash.</span></p> <p><span style="font-weight: 400;">Chloe Lee, her parents Geoff and Sommar, and her younger brother Declan were injured in a crash in the Western Australian Wheatbelt region on May 30.</span></p> <p><span style="font-weight: 400;">The family was rushed to hospital after being cut from the vehicle.</span></p> <p><span style="font-weight: 400;">Geoff came away from the accident with broken ankles, spinal injuries, and internal injuries while Somamar suffered a broken pelvis, wrist, and broken legs.</span></p> <p><span style="font-weight: 400;">Chloe suffered head and spinal injuries and was put on life support at Perth Children’s Hospital.</span></p> <p><span style="font-weight: 400;">According to a </span><a href="https://www.gofundme.com/f/e3e94c-help-the-lee-family?utm_campaign=p_cp+share-sheet&amp;utm_medium=sms&amp;utm_source=customer"><span style="font-weight: 400;">GoFundMe started for the family</span></a><span style="font-weight: 400;">, Chloe’s life support was turned off days after the accident when the family was well enough “to kiss their baby girl goodbye”.</span></p> <p><span style="font-weight: 400;">In an update on the fundraising site, Sommar wrote about the difficulty of the decision she and Geoff made.</span></p> <p><span style="font-weight: 400;">“Where do I even begin, how do you go on when one of the [two] halves of your heart is gone?,” she wrote.</span></p> <p><span style="font-weight: 400;">“When you are lying in your broken body unable to move to save your precious child.</span></p> <p><span style="font-weight: 400;">“Being told that your beautiful, sassy, amazing 10-year-old is being kept alive by life support and no it’s not like on TV, a miracle is not going to save her.”</span></p> <p><span style="font-weight: 400;">The decision was made even more difficult with the knowledge they had to tell their son, Declan, that his big sister “has to go to heaven”.</span></p> <p><span style="font-weight: 400;">“Having to tell our son, that his other half, his best friend and sister, has to go to heaven. That the machines breathing for her and keeping her precious heart pumping, needs to be turned off, is the hardest thing we had to do,” she continued.</span></p> <p><span style="font-weight: 400;">“Especially not being able to hold him in our arms, barely able to hold his hand.”</span></p> <p><span style="font-weight: 400;">Sommar also thanked the “amazing doctors and nurses” who helped at the scene of the accident and in the hospital while the family underwent treatment.</span></p> <p><span style="font-weight: 400;">“Thank you from the bottom of our hearts. There are no words to describe the place you will always have in our hearts.” </span></p> <p><span style="font-weight: 400;">Sommar said the family is now “stuck in limbo” as they recover from their injuries and mourn Chloe.</span></p> <p><span style="font-weight: 400;">The Lee family had recently moved to WA from Queensland for a “change of life”, with the fundraiser aiming to help them return to Caboolture in Queensland.</span></p> <p><span style="font-weight: 400;">Geoff and Sommar also wish to return Chloe to Caboolture for a funeral with her friends and family.</span></p> <p><span style="font-weight: 400;">The fundraiser has raised more than $64,000 in donations.</span></p> <p><em><span style="font-weight: 400;">Image: GoFundMe</span></em></p>

Sweet potato crusted shepherd’s pie

<p>Take out your casserole and try this recipe for the weekend.</p> <p><em>Serves 4 </em></p> <p><strong>Ingredients: </strong></p> <ul> <li>1kg sweet potato, peeled, diced</li> <li>150g butter</li> <li>Salt and black pepper</li> <li>3 tbsp olive oil</li> <li>1 onion, finely sliced</li> <li>1 carrot, finely diced</li> <li>1 stick celery, finely diced</li> <li>2 clove garlic, finely chopped</li> <li>500g lamb mince</li> <li>2 tbsp tomato paste</li> <li>2 tbsp Worcestershire sauce</li> <li>½ cup red wine, optional</li> <li>1 cup chicken stock</li> <li>1 x 400g tin tomato</li> <li>1 cup frozen peas</li> <li>½ cup grated cheddar cheese</li> <li>Green leaf salad, to serve</li> </ul> <p><strong>Method:</strong></p> <ol> <li>Steam or boil the sweet potato until cooked and soft then drain, mash and mix with the butter, salt and pepper to taste. Set aside.</li> <li>Heat a medium saucepan over a high heat, add the olive oil, onion, carrot, celery, garlic and lamb.</li> <li>Season with a little salt and cook over a medium to high heat to colour the lamb and cook the vegetables, stirring to break up with a spoon as it is cooking. Add the tomato paste and continue to cook for another minute then add the Worcestershire sauce, red wine, chicken stock and tinned tomato and cook over a low heat, stirring occasionally, for approx. 30 minutes.</li> <li>Preheat the oven to 190C. Adjust the seasoning of the lamb ragu then spoon the lamb mix into a baking dish, stir through the peas and top evenly with the mash sweet potato. Cover with the cheddar then bake for 15 -20 minutes before serving with a green salad if preferred.</li> </ol>

Duchess Meghan's secret engagement before bidding goodbye to royal life

A sweet treat: apple pie from Milan

<p>Serves 8</p> <p>Is there anything better than a delicious home cooked apple pie? Get ready for rave reviews to roll in!</p> <p>“I have such beautiful memories of my early days in Lombardy. The lessons I learned about family, food and tradition, and how intertwined they are, are at the heart of everything I do today,” says chef Alessandro Pavoni. “This dish reminds me of British apple pie. Russet apples have the perfect texture for it, plus they don’t release too much liquid. If they’re unavailable, use another similar apple that’s not too juicy, such as gala.”</p> <p><strong>Ingredients</strong></p> <ul> <li>1 kg russet apples</li> <li>1/3 cup (80 ml) dry white wine finely grated zest of 1 lemon 180 g caster sugar</li> <li>1 pinch of fine salt</li> <li>¼ cup (40 g) sultanas 60 g mixed peel</li> <li>60 g unsalted butter 18 slices white sandwich bread, crusts removed</li> <li>1½ tablespoons dark rum Mascarpone Cream (to serve)</li> </ul> <p><strong>Directions</strong></p> <p>Preheat the oven to 180°C.</p> <p>1. Peel and core the apples and cut each one into 16 thin wedges. Place in a heavy-based saucepan over high heat with the wine, lemon zest and 90 g of the caster sugar. Bring to the boil, then reduce the heat to medium and cook, covered, for 10 minutes. Uncover, add the salt and cook for another 15 minutes or until the liquid has evaporated.</p> <p>2 Remove from the heat, stir in the sultanas and mixed peel, then cover and set aside.</p> <p>3. Beat the butter and remaining sugar with a wooden spoon until well combined. Use three-quarters of this mixture to butter the base and side of a 23 cm round springform cake tin. Completely line the base and side of the tin with the bread, cutting the slices to fit as necessary and reserving some for the top, pressing gently to secure them in place.</p> <p>4. Fill with the apple mixture, then top with the remaining bread and spread the remaining butter mixture over the top.</p> <p>5. Bake for 40 minutes or until the bread is lightly golden. Remove from the oven, immediately pour the rum over the top and set aside for 30 minutes.</p> <p>6. They’re light and delicious and hugely popular in Vietnam as well as all around the world,” says chef Adam Liaw.</p> <p><em>Recipe from <u><a href="http://t.dgm-au.com/c/185116/71095/1880?u=http%3A%2F%2Fwww.booktopia.com.au%2Fadam-liaw-s-asian-cookery-school-adam-liaw%2Fprod9780733634307.html">Asian Cookery School by Adam Liaw</a></u> (Hachette, RRP $49.99)</em> -.</p> <p><strong>Ingredients</strong>:</p> <ul> <li>300g pork belly, skin and bone removed </li> <li>1 tbsp salt </li> <li>100g dried rice vermicelli </li> <li>30 rice paper sheets </li> <li>3 cups shredded iceberg lettuce </li> <li>1 cup loosely packed mint </li> <li>1 cup loosely packed coriander or perilla </li> <li>300g cooked prawns, peeled, deveined and split lengthways </li> <li>1 bunch Chinese chives, halved </li> <li>1 cup Nuoc Cham* (see tip below), to serve</li> </ul> <p>*If you don’t feel like making it yourself or can’t find Nuoc Cham at your local Asian supermarket then try it with sweet chilli sauce or experiment with your favourite Asian dipping sauce.</p> <p><strong>Directions</strong></p> <p>1. Place the pork belly in a pot just big enough to fit it. Cover with cold water. Add the salt, bring the water to a simmer and simmer for 20 minutes, or until the pork belly is cooked through. Remove from the water and allow to cool. Thinly slice the pork into 5cm wide slices no more than a few millimetres thick.</p> <p>2. Place the rice vermicelli in a large bowl and pour over plenty of boiling water. Leave for 5 minutes then drain, rinse in cold water, drain again and cut into 5cm lengths.</p> <p>3. Fill a large bowl with lukewarm water and dip a sheet of rice paper into the water until it slightly softens. (It will continue to soften out of the water.) Transfer the rice paper to a plate and place a pile of pork, lettuce, rice vermicelli and some mint and coriander on the paper in a line just in from the edge closest to you.</p> <p>4. Place a few prawns at the centre of the paper with the orange backs facing down and roll the paper, folding in the edges halfway along, as shown. Add a few spears of chives just before finishing the roll so the cut ends stick out of the top. Serve with Nuoc Cham.</p> <p><strong>Tips</strong>:</p> <ul> <li>Keeping the prawns separate from the other fillings is purely for presentation, so you can see the colourful backs facing outward through a single layer of rice paper.</li> <li>You don’t need to do all the work yourself – you can put the ingredients on platters on the dining table with bowls of warm water to dip the rice papers into and everyone can make their own.</li> <li>The filling of the rolls can be whatever you like. Sweet and sour pork

<p><span style="font-weight: 400;">Create this classic Chinese takeaway dish easily at home. Using pork neck is great as it has a good meat to fat ratio so stays nice and moist. In a medium size mixing bowl combine the shaoxing and soy sauce with the beaten egg and pork, making sure it is coated evenly. Allow to marinate for approximately one hour, covered in the fridge.</span></li> </ol> <p>Sweet and sour Sauce</p> <ol> <li style="font-weight: 400;"><span style="font-weight: 400;">In a bowl mix all of the sauce ingredients, except for potato flour and water. Set aside. </span></li> <li style="font-weight: 400;"><span style="font-weight: 400;">In a separate small bowl, mix the water and potato flour. This will be used to thicken the final sauce.</span></li> </ol> <p>Crispy pork </p> <ol> <li style="font-weight: 400;"><span style="font-weight: 400;">Pre heat vegetable oil in fry pan, or set deep fryer to 180 degrees. </span></li> <li style="font-weight: 400;"><span style="font-weight: 400;">In a large bowl combine the rice and potato flour. </span></li> <li style="font-weight: 400;"><span style="font-weight: 400;">Remove the pork from the marinade and toss in the bowl of flour, coating evenly.</span></li> <li style="font-weight: 400;"><span style="font-weight: 400;">Shake off any excess flour and deep fry for 2-3 minutes until browned and crisp. </span></li> <li style="font-weight: 400;"><span style="font-weight: 400;">Remove from the hot oil with a slotted spoon, drain on paper towel and set aside.</span></li> </ol> <p>Finishing the dish</p> <ol> <li style="font-weight: 400;"><span style="font-weight: 400;">Heat a wok and add 2 tbsp of vegetable oil. </span></li> <li style="font-weight: 400;"><span style="font-weight: 400;">Add the onion and garlic and stir fry for 30 seconds. </span></li> <li style="font-weight: 400;"><span style="font-weight: 400;">Add the capsicum and pineapple and cook for a further 30 seconds. </span></li> <li style="font-weight: 400;"><span style="font-weight: 400;">Add the sweet and sour sauce mix and bring to the boil. </span></li> <li style="font-weight: 400;"><span style="font-weight: 400;">Add the spring onions and sliced chilli. </span></li> <li style="font-weight: 400;"><span style="font-weight: 400;">Add the rice flour and water mix and stir until sauce has thickened. </span></li> <li style="font-weight: 400;"><span style="font-weight: 400;">Finally, add all the fried pork to the mix and toss until well coated. </span></li> <li style="font-weight: 400;"><span style="font-weight: 400;">Garnish with fresh coriander and serve with steamed rice.</span></li> </ol> <p><em><span style="font-weight: 400;">Recipe by Australian Onions.</span></em></p>

Pork and apple sausage rolls

<p><span>These sausage rolls are perfect for picnics, lunch boxes, party dishes or as a snack. </span></p> <p><strong><span>Ingredients:</span></strong></p> <ul> <li><span>6 sheets frozen puff pastry, partially thawed</span></li> <li><span>1 egg, lightly beaten</span></li> <li><span>1 tbs black sesame or poppy seeds</span></li> <li><span>Tomato or barbecue sauce, to serve</span></li> </ul> <p><span>Filling</span></p> <ul> <li><span>1 tbs olive oil</span></li> <li><span>2 brown onions, peeled, coarsely grated</span></li> <li><span>8 slices thick white bread, crusts removed</span></li> <li><span>¼ cup milk</span></li> <li><span>2 large Granny Smith apples, peeled, cored, coarsely grated</span></li> <li><span>500g sausage mince</span></li> <li><span>500g pork mince</span></li> <li><span>½ cup flat leaf parsley leaves, finely chopped</span></li> <li><span>1 egg, lightly beaten</span></li> </ul> <p><strong><span>Method:</span></strong></p> <ol> <li><span> Preheat oven to 200°C fan forced. Lightly grease two large oven trays.</span></li> <li><span> To make filling, heat oil in a medium frying pan over a medium-low heat. Add onions. Cook, stirring occasionally, for 5 minutes or until onion is soft. Set aside to cool 5 minutes.</span></li> <li><span> Meanwhile, tear the bread into small pieces. Place in a large bowl. Pour over milk. Stand 5 minutes. Squeeze and discard excess milk from the bread. Return bread to the bowl.</span></li> <li><span> Squeeze and discard the excess moisture from apple. Add apples to the bread and onion, mince, parsley and egg. Season. Use your hands to mix well.</span></li> <li><span> Place pastry sheets on a clean surface. Cut in half crossways. Spoon a heaped ½ cup of filling down the long side of each piece of pastry. Roll up to enclose. Brush tops with egg. Sprinkle with seeds. Cut each roll in half crossways.</span></li> <li><span> Place on oven trays, allowing room between each. Bake 50 minutes. Serve with sauce.</span></li> </ol> <p><strong><span>Tips:</span></strong></p> <ul> <li><span>Squeezing out excess moisture from apple will ensure the pastry is crisp.</span></li> <li><span>Partially thawed pastry is much easier to work with than fully thawed pastry. Remove one piece at a time from the freezer and stand for 3-5 minutes (depending on temperature of the day) on the bench before cutting and rolling.</span></li> <li><span>Sausage rolls can be frozen at the end step 4 or after cooking. Freeze in an airtight container for up to two months. Reheat from frozen in a 180°C oven.</span></li> <li><span>Unable to get good quality pork mince? “Something’s wrong with the plane I love you”: Passengers write goodbye messages after engine fire

Say goodbye to bad breath

<p>If you suffer from bad breath, there are simple things you can do in addition to regularly brushing and flossing your teeth. Don’t forget to brush the top of your tongue with your toothbrush, too, to get rid of food particles and bacteria.</p> <p><strong>1. Drink plenty of water</strong></p> <p>Coffee, beer, wine and whisky leave residues that infiltrate the digestive system, so that for some time afterwards each breath expels traces of them.</p> <p><strong>2. Cloves, fennel and anise seeds</strong></p> <p>These are effective breath fresheners. Mix together a small amount of each and carry a small bag of them so you can chew some after meals – if you don’t mind the rather strong taste.</p> <p><strong>3. Avoid highly spiced foods</strong></p> <p>Foods such as garlic, onions, chillies, salami, strong cheeses and smoked foods recirculate through essential oils left in your mouth.</p> <p><strong>4. Chew a few sprigs of Mint or parsley</strong></p> <p>The chlorophyll in these green plants neutralises odours.</p> <p><strong>5. Try gargling lavender</strong></p> <p>Lavender is an effective mouth-freshener. Put a few drops of lavender essential oil in warm water and gargle.</p> <p><strong>6. Try a sea salt rinse</strong></p> <p>Rinse your mouth with a teaspoon of salt dissolved in warm water after flossing. Salt’s mild antiseptic properties help to get rid of bacteria that cause bad breath.</p> <p><strong>7. Brush with tea-tree oil</strong></p> <p>Use a toothpaste that contains tea-tree oil, a natural disinfectant. Preheat the oven to 200°C. You will need 6 x 2 cup capacity ovenproof pie dishes.<span> </span><br /><br />2. Heat the oil in a large pot, add the onion and cook over a medium heat for 5 minutes or until golden. Add the garlic and the beef and cook for 5 minutes until the beef is browned.<br /><br />3. Add the flour and tomato paste and cook for a further 2 minutes, stirring constantly. Stir in the red wine and stock and bring to the boil. Add the carrots, mushrooms and chopped thyme. Reduce the heat, cover and simmer for about 1 hour then remove the lid and cook for a further 45 minutes until the beef is tender and the sauce is reduced and thickened. Stir through the parsley, transfer to a bowl and allow the filling to cool completely.<br /><br />4. Using the top of a pie dish as a guide, cut 6 circles from the pastry, about 2cm larger than the dish. Spoon the cooled filling into the dishes. Brush the edges of each pastry circle with a little water then cover the dishes (damp side down); pressing the pastry to the side of the dish to seal. Cut a small cross in the top of each pie, insert a sprig of thyme and lightly brush with milk.</p> <p dir="ltr" align="left">5. Bake for 20-25 minutes or until the pastry is crisp and golden and the filling is hot. Warming pork and butterbean stew

<p>Recipe extract from Healthy Eating to Reduce the Risk of Dementia by Margaret Rayman and Katie Sharpe, published by Kyle Books, RRP $24.99.</p> <p><strong>Ingredients </strong></p> <ul> <li>2 tablespoons rapeseed oil</li> <li>600g lean pork, diced</li> <li>1 onion, diced</li> <li>3 garlic cloves, crushed or finely chopped</li> <li>2 sticks celery, thickly sliced</li> <li>2 leeks, thickly sliced</li> <li>1 teaspoon ground coriander</li> <li>1 teaspoon ground cumin</li> <li>1 tablespoon harissa paste</li> <li>2 tablespoons tomato puree</li> <li>400g can chopped tomatoes</li> <li>500ml vegetable stock</li> <li>400g can butterbeans, drained and rinsed</li> <li>2 tablespoons roughly chopped coriander</li> </ul> <p><strong>Method </strong></p> <p>1. Preheat the oven to 180°C/gas mark 4.</p> <p>2. Add half the oil to a casserole dish and brown the cubed pork pieces over a medium-high heat. Remove from the pan and set aside.</p> <p>3. Add the remaining oil to the pan and fry the onion, garlic, celery and leeks over a medium heat until slightly soft, about 3–4 minutes.</p> <p>4. Return the pork to the pan and add the ground coriander, cumin, harissa paste and tomato puree and fry for a further 2 minutes. Add the chopped tomatoes and stock, bring to the boil and then transfer to the oven.</p> <p>5. Cook for 50 minutes (or until the pork is tender). Check after 30 minutes and add more water if needed.</p> <p>6. Add the butterbeans and return to the oven for 5 minutes to heat through. Preheat oven to 200°C (180°C fan-forced).  </p> <div>2. Heat 1/2 tablespoon of the olive oil in a large frypan and brown chicken strips for 1 to 2 minutes on each side. Remove chicken from pan and set aside.</div> <div><br />3. Heat remaining oil and sauté mushrooms for 2 minutes.</div> <div><br />4. Return chicken to pan with mushrooms; add soup, peas and Greek yoghurt.<br />Season with cracked pepper. Bring to the boil, then turn off the heat.</div> <div><br />5. Transfer mixture to a pie dish approximately 28 cm x 21 cm.</div> <div><br />6. Arrange broccolini on top of chicken filling.</div> <div><br />7. Cover pie dish with puff-pastry sheets, cut a hole in the centre using a sharp knife and press down edges with the prongs of a fork.</div> <div><br />8. Brush pastry surface with beaten egg yolk and cook in oven for 25 minutes.</div> <p>9.
