The correct way to butter toast

Even though buttering your bread after it’s been toasted is the logical order most people follow, it might not be the best way to butter your bread after all.

American chef Raquel Pelzel recently told Food52 that she butters her bread before she toasts it.

“I like to butter and oil bread before toasting (and salt it, too!) because the bread absorbs the fat – it seeps down into the crumb,” she said. “After toasting (broiler/grill pan/grill/skillet), the top layer of the toast takes on a glowy and caramelised sheen and a crispness that is so good. Plus all the sugars in the butter caramelise a little.”

Raquel continues, “Bite into the toast and the top layer of bread shatters and then gives way to this more tender – yet still flavourful due to the sponge-like absorption of fat – interior layer.”
