Recipe: Rock cakes

Also called a rock bun, these delicious hard fruitcakes are small and rough – hence their name. They’re an old-school favourite that will not disappoint for afternoon tea or as a special treat when the grandkids come over.

Ingredients:

Method:

1. Preheat the oven to 180°C and line baking tray with baking paper.

2. Sift flour, sugar and baking powder into a bowl, then rub in the butter into the mixture until it resembles breadcrumbs. Stir in fruit.

3. In another bowl, beat the eggs, milk and vanilla together.

4. Add the egg to the other mixture and stir with a spoon until the mixture forms a thick, lumpy dough. If needed, add a teaspoon more milk to make the mixture stick together.

5. Place walnut-sized spoons of the mixture onto the prepared baking tray. Leave space between each one as they will flatten and spread out to double their size during baking.

6. Bake for 15 to 20 minutes, until golden brown. Remove from the oven and allow to cool on a wire rack.
