Pear, pomegranate and feta salad

Add a splash of summer to your meal with this pear and pomegranate feta salad- the perfect side dish.

Serves: 2

Ingredients:

• 3 cups green leaf lettuce, rinsed and torn
• 1 pear
• 1/3 cup pomegranate seeds
• 1 tablespoon vegetable oil
• 1 tablespoon lemon juice
• 1 teaspoon prepared Dijon-style mustard
• 1/2 tablespoon honey
• 2 tablespoons pomegranate juice
• Pepper to taste

Method:

1. Halve and core the pear, then cut into thin slices. Add pear, feta cubes and pomegranate seeds to the bowl of lettuce and mix gently.
2. To make the dressing, combine the oil, pomegranate juice, lemon juice, mustard, honey and pepper to a saucepan. Bring to the boil over high heat then reduce and simmer. Stir frequently until the dressing thickens slightly, which should take about two minutes. Pour the warm dressing over the salad and serve.
