Breakfast bacon burrito

There’s nothing better than bacon and eggs for breakfast, and this tasty breakfast burrito brings out the best in both to give you the perfect start to the morning.

Serves: 2

Ingredients:

Method:

  1. Pre-heat a sandwich press or non-stick pan.
  2. Lay the soft tortilla onto a flat surface.
  3. Arrange the scrambled egg, tomato slices, spinach leaves. Capsicum and mozzarella along the centre of the tortilla.
  4. Top the filling with two freshly grilled rashers of short cut bacon.
  5. Top the bacon with a generous dollop of tomato chutney.
  6. Fold the ends of the tortilla toward the centre, turn the tortilla a half turn and roll tightly to enclose the filling.
  7. Spray tortilla with a little olive oil and place in the pre-heated sandwich press or non-stick pan until turning frequently until toasted.
  8. Serve hot.
