Apple and chicken quesadilla

These apple and chicken quesadillas are a tasty variation on the classic Mexican dish that provide the perfect snack or light lunch in the warmer months.

Makes: 12 triangles

Ingredients:

Method:

  1. To begin, heat a large pan on a medium high heat.
  2. Place a tortilla in the skilled and flip with spatula a couple of times, letting it sit in the pan heating up until air pockets start to form and the tortilla puffs up.
  3. Place cheese on half of the tortilla, a couple of centimetres from the edge.
  4. Add chicken pieces on top of the cheese then fold tortilla like an omelette.
  5. Press down on folded tortilla with spatula and lower the heat to medium.
  6. When cheese has melted, remove to cutting board.
  7. Open the tortilla wide (careful about the heat) and layer on apple and salsa.
  8. Fold tortilla back and cut into triangles.
  9. Repeat process with remaining ingredients and tortillas.
